Salvador Dali, Matisse, Picasso, weaving together gastronomy, art, history and the mysticism of these place. this is our family business led by the French Chef Gael Schaller and Writer Nina Schaller, creating a rare balance between flavours and meaning. Separately, we host culinary masterclasses in our historic home.
My cuisine is the result of a lifetime dedicated to food, shaped by family heritage and international experience.
Raised in a family of fishmongers, I worked alongside my parents from an early age and later became director of the family business for over ten years. This foundation instilled in me an uncompromising respect for product quality, seasonality and precision, with a particular expertise in seafood.
My culinary journey led me through Ireland, Bulgaria, England, Kazakhstan, Russia, Israel and Spain, where I absorbed a wide range of techniques, cultures and philosophies. These influences naturally merged into a cuisine that balances Mediterranean elegance, Northern discipline and Eastern depth.
Today, my cooking is product-driven, refined and intuitive.
I favor clarity over complexity, technique in service of flavour, and dishes that express both authenticity and emotion.
